A sommelier by trade, Guillaume Roget began his career at the Château de Brindos before joining the two-Michelin-starred restaurant "Chez Ruffet" as head sommelier. In 2006, at the age of 23, he opened his own restaurant with his best friend—La Cabane du Pêcheur—in the fishing port of Hendaye. He offers family-style cuisine, already focused on seafood. This step was decisive in his career, as it shaped his entrepreneurial spirit. The adventure ended 7 years later.
In 2014, he joined the restaurant Le Brouillarta as a second before taking over the kitchen the following year and becoming the manager of the establishment. Gradually, he was tempted by more elaborate cuisine, supported by a loyal clientele until, in 2019, he obtained a star in the prestigious Michelin Guide. 2021 marks the opening of a new chapter with the creation of the Ekaitza table.
A demanding and atypical course focused on excellence, rewarded in 2025 with a second star in the prestigious Michelin guide.
